Our 12 Bar Rye Whiskey is made from...

86% locally grown rye and 14% malted barley. The grains arrive at the distillery already milled into flour. The rye flour is added to 500 gallons of hot water in our mash tank and is cooked in order to extract the starches. The malted barley is then added to convert the starch into simple sugars. We do not "wash" our mash. The finished mash is chilled and pumped into one of our fermentation tanks where a specially selected type of yeast is added to convert the sugars into alcohol. 

After 4 days the yeast's work is done and we have a rye and barley distiller's beer that is around 7% ABV. The beer is then distilled in our 600 gal pot still in what is called a "stripping" run to concentrate the alcohol into a low wine of approximately 30% ABV. The low wine is added to our 300 gal finishing still and distilled to approximately 75% ABV. This is collected, cut with purified water to 62.5% ABV, and then barreled. The spirit is matured a minimum of 6 months. After the aging process, the spirit is evacuated from the barrel and cut with purified water to create the final product at 45% ABV. 

We then hand bottle, label, and seal our 12 Bar Rye Whiskey.
