The Hidden Still Gin Process

Our Gin is made from 80% locally grown corn and 20% malted barley. The grains arrive at the distillery already milled into flour. The corn flour is added to 450 gallons of hot water in our mash tank and is cooked to extract the starches. The malted barley is then added to convert the starch into sugar. We don’t wash our mash and the finished mash is cooled and pumped into one of our fermentation tanks where specially selected yeast is added to ferment the sugars into alcohol.

After 5 days the yeast’s work is done and we have a corn and barley distiller’s beer that is around 6.5% ABV. The beer is then distilled in our 600 gal hybrid column still in what’s called a “stripping” run to concentrate the alcohol into a low wine of approximately 25% ABV. The low wine is added to our 300 gal finishing still and distilled to approximately 75% ABV.  The collected alcohol is distilled a third time to further smooth and purify to 85% ABV.  This is distilled a fourth time and our specially selected blend of botanicals, including juniper berries, citrus zest, and horseradish is vapor infused to create our unique and smooth gin.

The finished product is hand bottled, labeled and sealed.
