Our Distilling Process

Vodka


Mad Crayfish Vodka

Mad Crayfish Vodka

Our Mad Crayfish Vodka is made from 80% locally grown corn and 20% malted barley. The grains arrive at the distillery already milled into flour. The corn flour is added to 500 gallons of hot water in our mash tank and is cooked to extract the starches. The malted barley is then added to convert the starch into sugar. We don’t wash our mash and the finished mash is cooled and pumped into one of our fermentation tanks where specially selected yeast is added to ferment the sugars into alcohol.

After 4 days the yeast’s work is done and we have a corn and barley distiller’s beer that is around 8% ABV. The beer is then distilled in our 600 gal pot still in what’s called a “stripping” run to concentrate the alcohol into a low wine of approximately 35% ABV.  The low wine is added to our 300 gal finishing still and distilled to approximately 75% ABV.  This process is repeated several more time until 250 gallons of 75% ABV alcohol is produced. It is then placed back into the 300 gal still for the final finishing distillation run where it is distilled to 95% ABV. This is collected and cut with purified water to 43% ABV.

We then hand bottle, label, and seal our Mad Crayfish Vodka.

UNION CANAL RUM

Our Union Canal Rum is made from sugar and table grade molasses. The sugar and molasses are mixed with water and fermented with specially selected yeast. After fermentation is complete, the fermented mixture is distilled in our 600 gal pot still in a "stripping" run to concentrate the alcohol to approximately 40% ABV. This is then distilled in the 300 gal finishing still to approximately 80%ABV and collected and cut with purified water to 45%ABV.

We then hand bottle, label, and seal our Union Canal Rum.
